The weekend of July 9th saw our first pop-up at The Cotswolds Distillery in Stourton. We had been looking forward to the event for weeks and were excited to be showcasing the Cotswolds Distillery products alongside our tasting menu.
After lots of careful preparations we arrived at the distillery with boxes and boxes of food, our trusty fridge, table decorations and all of our front of house equipment. The distillery has a small but lovely kitchen which for the most part is used to make cups of tea and make quick lunches for staff on a daily basis so we cleared out a few bits and bobs and set up camp!
The CD crew did a fantastic job of clearing out the distillery after a day of tours and gin making to transform the space into a modern dining space for our 27 diners to enjoy. The tables were large trestles of 8 so people got to meet some folks they hadn’t before and chat about their foodie loves while enjoying delicious cocktails and fabulous food.
At 7.30pm the doors were opened and people started to arrive, mingling around the distillery shop and lounge while enjoying their nibbles of curried popcorn and cheesy churros alongside a tasty ‘Hugo’ cocktail. Once everyone had arrived they moved on through to the distillery to take their places.
The first course was a ham hock terrine with fennel, apple and gin chutney. This was served with a classic Cotswolds dry gin and tonic.
Second was our gin and beetroot cured salmon with smoked salmon croquette and pickled beetroot. To accompany this fresh course a ‘Cotswolds Mule’ was served, made with award winning 1616 barrel aged gin, lime and ginger ale.
Our slow braised BBQ pork cheeks, barley and whisky sauce was served alongside a ‘Beggars Banquet’. This is a fantastic cocktail of Cotswolds Distillery single malt spirit, lemon juice, maple syrup and Hooky bitter.
For dessert we created a classic refreshing lemon posset with blueberry jelly, blueberry and whisky jam filled doughnuts and shortbread crumb. The Cotswolds Distillery served a shot of their delicious Limoncello to finish the meal.
All the guests were thrilled with their evening, as well as both the Little Pickle team and the Cotswolds Distillery team! So much so that we hope to hold another pop-up at the distillery this coming autumn so watch this space as tickets will go very quickly. We can’t wait!
